Pisco Varieties

There are only 4 varieties of pisco:

  1. Pure (Puro):  Made of Quebranta grapes.  Mollar and the Negra can also be used to prepare it.
  2. Aromatic (Aromatico): From the aromatic grapes of the family of Moscatos.
  3. Green Must (Mosto Verde):  Made by the must during the process of fermentation.
  4. Acholado:  Made of the distillation of musts of different varieties of grapes.

There is a test known as cordon y rosa to verify the quality of pisco. After shaking a bottle of authentic pisco a viscosity should remain resembling a twister.  The bubbles formed along the tale are called cordon and the bubbles floating over the eye of the twister are called rosa.
