Pisco Sour

Pisco Sour is the traditional Peruvian drink. It is very easy to make Pisco Sour at home in a few minutes.  You just need:
 

  • 3 serving size of Pisco
  • 1 serving size of lemon juice
  • 1 serving size of  sugar syrup
  • Enough Ice
  • 1 egg white

Mix all the ingredients in a blender.  To serve the drink use small glasses with the rims previously "frosted" with a mix of sugar and egg white.  Add a pinch of powder cinnamon.

Pisco Sour is made of a "pure Black grape" today this grape is called "Quebranta", the authentic descendent of the one planted in the Valleys of Ica by Francisco Caravantes in 1556, according to "Las Tres Epocas del Peru" by J.M. Cordova.

The Pure Pisco from Ica, made of Moscatel or Italia grape was the first "mix for lady's taste". This prestigious mix is used nowadays.

In 1630 Francisco Lopez de Caravantes used to say that in the Valley of Pisco there was a Peruvian spirit that competed with "our jerez", because it was made with the small grape and was one of the most delicious liquors drunk in the world.

During the first decade of the XX Century the Pisco was already being mixed with lemon juice, sugar and carbonated water and it was given the name "Chilcano". At the end of the third decade of the XX Century there was a small and elegant bar in Lima, located close to the Bolivar hotel in the street called Boza.  Bar Morris, called after its owner Mr. Morris, "Gringo Morris", was known for its friendly and warm atmosphere where he himself served the customers.  The bar was the meeting point of his ex coworkers and Limeņo gentlemen.

In the search of the drink that would be milder than the pure Pisco from Ica, Morris and his Peruvian friends created a "perfect formula" that was called "Pisco Sour", which combined like in his own life, the Peruvian Pisco, his Peruvian wife and his three sons with the North American sour from his homeland.

A renowned pure Pisco from Ica, Bitter Angostura, lemon juice, sugar syrup, siphon water, whipped egg white.  At the end the "barman's touch".  This original drink was such a success  that the most elegant hotels in Lima such as the Maury and Bolivar, very soon included this drink and its popularity and fame exits until nowadays.  Therefore there is certain confusion regarding as where the Pisco Sour was first made, depending on the different sources of information.
